Cozy Creamy Chicken & Wild Rice Soup

Warm, hearty, and simple enough for a quiet winter lunch or dinner.

This is the kind of soup you make when the snow is falling, the house is quiet, and you don’t need anything fancy—just something warm and comforting simmering on the stove.

Ingredients

  • 1 tbsp olive oil or butter

  • 1 small onion, diced

  • 2 carrots, peeled and sliced

  • 2 celery stalks, sliced

  • 2 cloves garlic, minced

  • 1 lb cooked chicken, shredded (rotisserie works perfectly)

  • 1 cup uncooked wild rice blend

  • 6 cups chicken broth

  • 1 tsp dried thyme

  • ½ tsp dried sage (optional but lovely)

  • Salt & pepper, to taste

  • 1 cup milk or half-and-half

  • 2 tbsp flour (optional, for extra creaminess)

Instructions

  1. In a large pot or Dutch oven, heat oil or butter over medium heat.

  2. Add onion, carrots, and celery. Cook 5–7 minutes until softened.

  3. Stir in garlic and cook 30 seconds until fragrant.

  4. Add chicken, wild rice, broth, thyme, sage, salt, and pepper.

  5. Bring to a gentle boil, then reduce heat, cover, and simmer 40–45 minutes (until rice is tender).

  6. If you’d like it creamier: whisk flour into the milk, then slowly stir into the soup. Simmer 5–10 more minutes until slightly thickened.

  7. Taste and adjust seasoning.
