Ingredients:

  • 6 eggs

  • ¼ cup milk

  • ½ cup chopped zucchini

  • ½ cup cherry tomatoes (halved)

  • ¼ cup chopped onion or shallots

  • ½ cup crumbled feta or goat cheese

  • Fresh herbs: basil, parsley, thyme

  • Salt & pepper
