Ingredients:
6 eggs
¼ cup milk
½ cup chopped zucchini
½ cup cherry tomatoes (halved)
¼ cup chopped onion or shallots
½ cup crumbled feta or goat cheese
Fresh herbs: basil, parsley, thyme
Salt & pepper
Instructions:
Preheat oven to 375°F.
Whisk eggs and milk, season with salt and pepper.
In an oven-safe skillet, sauté veggies until soft.
Pour egg mixture over veggies, sprinkle cheese and herbs.
Bake for 12-15 minutes until golden brown and set.
