Ingredients:
1 can chickpeas (drained/rinsed)
1 cucumber (diced)
1 bell pepper (chopped)
Handful of cherry tomatoes (halved)
¼ red onion (thinly sliced)
Crumbled feta or diced avocado
Chopped parsley or dill
Dressing:
2 tbsp olive oil
Juice of 1 lemon
1 garlic clove (minced)
1 tsp Dijon mustard
Salt & pepper
Instructions:
Combine salad ingredients in a bowl.
Whisk dressing separately and pour over salad.
Toss gently and chill before serving.
