The Perfect Chili Partner: Quick & Easy Cornbread

Because chili and cornbread belong together. This recipe is simple, golden, and ready in about 25 minutes.

Ingredients

  • 1 cup yellow cornmeal

  • 1 cup all-purpose flour

  • ¼ cup sugar (optional)

  • 1 tbsp baking powder

  • ½ tsp salt

  • 1 cup milk (or buttermilk)

  • ¼ cup melted butter

  • 1 egg

Instructions

  1. Preheat oven to 400°F (200°C) and grease an 8x8 pan or cast iron skillet.

  2. In a large bowl, whisk together dry ingredients.

  3. In another bowl, whisk together wet ingredients until smooth.

  4. Combine just until mixed (don’t over-stir).

  5. Bake 20–25 minutes, until golden and a toothpick comes out clean.

  6. Serve warm with butter or honey.
